I'm still on a soup kick...this one's my recipe.
1 large butternut squash
1/2 medium onion
2 redskin potatoes
1 Tb butter or earth balance
enough veggie broth to cover veggies
Peel and cube squash and yam, and add to pan with butter. Chop onion and potato, and add to the pan. When veggies are mostly cooked, add enough broth to cover them and season to taste. Simmer on low heat til all chopped veggies are soft, and puree (I use a Bamix, but a blender or food processor will work as well).
It's easy...I promise! Also cheap.
